Executive Sous Chef - Pilanesburg Lodge

Exec Sous Chef role and Responsibility Be the number 2 in teh kitchen at a large lodge with conference facilitis, be comfortable with taking direction and managing a team of around 36 people. Requirements: A Minimum of 3 Years work experience in a 4 or 5 Star environment as Senior or Executive Sous Chef Computer Literate Windows, Word, Excel knowledge essential Excellent Guest Relations & Motivational Skills, they want someone who is comforatble on the floor and in the kitchen Excellent planning Skills Strong Leadership skills and able to lead a dedicated team efficiently Excellent Menu planning Skills Strong organizational Skills Able to maintain 4 Star Standards Excellent Communication Skills Able to work shifts and/or work additional shifts and hours at short notice Work well under pressure Sound knowledge of Industrial Relations Procedure Good decision making Skills Excellent inter- personal skills Good knowledge of Hygiene and Food safety protocols Qualifications: Minimum Grade 12 at a recognized Institution Chefs Qualification or Diploma Key Areas of Responsibility: Daily running of a 4 Star Kitchen in its entirety on a day to day and monthly Basis Placing and receiving orders staying in line with budgeted figures Regular stock counts, checks on wastage in order to maintain Food Cost Maintaining Guest Satisfaction of all Food items Hands on planning and Organization of Kitchen Assisting with implementation of new menus and costing thereof Assist with cross training within the Kitchen Be familiar with Health and Safety procedures Be familiar with food safety and Hygiene standards Ensure all operating equipment is properly utilized by correct handling and storage and regular Stock counts to minimize losses Responsible to operate within Policies and Procedures as set out in the operating Manual The role also requires strong operational and financial awareness, ensuring that purchasing, stock control, and cost management are carefully monitored while maintaining exceptional quality and consistency.
